Carbonara is one of those dishes that's easy to do, hard to do well. We start with crispy pancetta rendered in its own fat, then toss the hot pasta with a tempered mix of egg yolks and aged Pecorino Romano. The residual heat creates a glossy, creamy sauce - all without a drop of cream.
