Bolognese is a slow dish, and we treat it that way. We start with a finely diced soffritto of carrot, celery, and onion, brown ground beef and pork, then add tomato passata, a splash of red wine, and a touch of milk for richness. The sauce simmers for hours until it's thick, glossy, and deeply flavourful.
We serve the ragu over fresh handmade pappardelle - the wide ribbons hold every bit of the sauce. Finished with a generous shaving of Parmigiano Reggiano and a drizzle of extra-virgin olive oil, it's Italian comfort food at its very best, plated for the Calgary diner.
